Fast-casual restaurant chain Dig Inn has appointed Dylan Mendelsohn as its new Culinary Director. Mendelsohn, formerly of Eleven Madison Park and Life Alive Cafe, has launched the chain's fall menu.
The menu, now available at all Dig Inn locations nationwide, introduces eight new dishes. Mendelsohn's focus is on vegetable-forward cooking and utilizing the Northeast's fall harvest, including ingredients like Hudson Valley apples and Yukon potatoes.
"This menu is our way of following the produce lead and pairing familiar fall flavors with something unexpected," Mendelsohn stated. He emphasized that each dish is prepared from scratch without shortcuts.
New additions include Autumn Farro with roasted butternut squash, Brussels & Cabbage with sweet chili crisp, and a Waldorf-style salad featuring Hudson Valley apples. The company is also offering family meals and catering packages.
