Market research firm Ipsos has released new data on American consumers' evolving attitudes and purchasing behaviors within the food and beverage sector. The research indicates a growing demand for healthier and functional foods, with consumers increasingly open to products fortified with vitamins, fiber, or protein.

Simultaneously, economic pressures are significantly shaping grocery shopping. Nearly six in ten respondents, 58 percent, now pay more attention to the per-unit cost rather than the total cost of food items. This behavior is particularly pronounced among younger demographics and lower-income households.

The study also highlights a rising concern regarding food safety and additives. Obesity is identified as a primary threat to American public health. Alongside taste, quality, and price, consumers are expressing a preference for avoiding processed foods.

Ipsos also notes a missed opportunity in connecting plant-based foods with healthy lifestyles, despite their nutritional benefits. Companies have an avenue to refine their communication and product development to align with these evolving consumer demands.
