Philippine Department of Tourism Highlights Bicol Region's Distinctive Cuisine
The Department of Tourism Philippines is showcasing the diverse culinary landscape of the Bicol region, known for its spicy, coconut-based dishes. Signature items like Bicol Express and Laing are featured.

The Department of Tourism Philippines is drawing attention to the rich and diverse culinary offerings of the Bicol region. This area, located on southeastern Luzon, is particularly renowned for its characteristic dishes that blend the creaminess of coconut milk with the heat of local chilies.
Among the most recognized Bicolano specialties are Bicol Express and Laing. Bicol Express is a traditional stew made with pork, shrimp paste, tomatoes, onions, green chilies, and coconut milk. Its popularity has spread nationwide, appearing in everything from humble eateries to upscale restaurants across the Philippines.
Laing, conversely, is prepared using taro or banana leaves, coconut milk, chili, garlic, and ginger. While pork or fish may be added, it is often enjoyed on its own. Other notable regional dishes include Pinangat, a noodle soup called Kinalas, and Sinantolan, a delicacy made from santol fruit.
The tourism department highlights that Bicol's gastronomic scene extends beyond its signature spicy fare. The region also offers unique flavors such as Kinunot, a dish featuring shredded stingray cooked in coconut milk. Finally, the local Pili nuts are emphasized, used in various desserts and pastries like tarts and ice cream, providing a rich, nutty taste.
