Restaurants Participate in 'Pay What You Can' Initiative
Over one hundred restaurants globally are participating in a 'Pay What You Can' day on August 26, 2026, asking customers to pay what they feel is appropriate for food and service.

More than 100 restaurants worldwide are participating in a 'Pay What You Can' initiative on August 26, 2026. Diners at these establishments are asked to determine the amount they wish to pay for their meals and the service provided, rather than adhering to fixed prices.
The initiative was started by Saqib Keval and Norma Listman, co-owners and chefs at the Mexico City-based restaurant Masala y Maíz. They have hosted 'Paga Lo Que Puedas' (Pay What You Can) days for over eight years. Last year, they expanded the invitation to other restaurants, drawing over 20 participants, including three Michelin-starred establishments.
Keval and Listman describe the event as a "global day of hospitality" aimed at fostering trust, access, and community within dining rooms. While drinks are typically charged at full price, many patrons contribute what they deem suitable or even offer exchanges like artwork or services for the restaurant staff.
This year's participants are primarily located in Mexico and the United States, with additional restaurants in Colombia, France, India, Nigeria, and Turkey. The organizers provide a playbook for new participants, covering aspects such as service design, staff preparation, financial considerations, and community engagement.
